Smoked Turkey with Honey Glaze

1 Boneless skinless turkey breast, about 4 lbs

Ingredients for Wet Rub
2 teaspoons brown mustard
2 teaspoons extra-virgin olive oil
Ingredients for Dry Rub
1 Tbsp dark brown sugar
1 tsp garlic salt
1 tsp celery salt
1 tsp paprika
1/2 tsp black pepper
1/4 tsp cayenne pepper
Ingredients for Honey Glaze
4 Tbsp butter (1/2 stick)
4 Tbsp Maple syrup
2 Tbsp Honey

Mix you wet and dry rub ingredients in different bowls.  Rub the wet rub all over the boneless turkey breast, then sprinkle the dry rub over it. Make sure to get it everywhere including those yummy edges. Fire up the smoker to 250 Degrees. Cook breast for 2/12 hours, then mix and heat the honey glaze ingredients until butter is melted.  Brush on glaze at the 2 1/2 hour mark and cook for 15 min. Then glaze again and cook for another 15 mins.  Slice and enjoy on it’s own or on a sandwich.
